Gluten & fat free brownies

Ingredients

2 cups cooked black beans 2 small-medium ripe bananas 1/3 cup pure maple syrup 1/4 cup muscavado sugar 1/4 cup cocoa 1 tsp vanilla extract 1/2 cup quinoa flour (uncooked quinoa run through a food processor) 1/2 cup raspberries (frozen or fresh) 1/2 cup chopped walnuts

Method

Preheat oven to 175C. Grease an 8x8" pan and set aside. Combine all ingredients, except quinoa, in a food processor or blender and blend until smooth, scraping sides as needed. Stir in the raspberries, walnuts and quinoa and pour batter into the pan. Bake approx 30 minutes or until a toothpick inserted in the centre comes out clean. Allow to cool before slicing.


Comments:

Dense, fudgey and ultra-healthy, these brownies are a great alternative to traditional brownies! It's amazing how they taste like chocolate and fudge and not beans! If you find these brownies are too soft or too fudgey, add another 1/4 cup oats or flour
