1pkt (300g) firm tofu, slice into thin triangles Marinade in the following mix for a minimum of 2 hours, overnight for best results: 1 Tbsp sesame oil 2 Tbsp sweet soy sauce 1 Tbsp grated fresh ginger, packed firmly 1 tsp grd five spice 1/4 tsp dried chilli flakes Oil for stir fry 2 spring onions, slice on bias Sprinkling of chia and sesame seeds I large carrot, finely sliced into noodles 1/2 cup of shelled edamame soybeans, thawed in very hot water, drained Serve with noodles or steamed rice
Heat oil in a wok or a large frying pan and add the marinated tofu, fry on each side for a about a minute, until golden. Add any remaining marinade and sprinkle over the seeds. Add the spring onions, carrot noodles and the edamame beans and quickly stir through. Being careful not to over cook. Serve on a bed of noodles of choice or steamed rice.
