Vegan chilli

Ingredients

1pkt Fry’s vegetable strips (vegan) 1 medium onion sliced or diced 1 large capsicum sliced or diced 2 chopped green chillies 3 chopped cloves of garlic 1 tbsp chopped ginger 1 spring onion Handful of fresh coriander 15ml white vinegar 45ml soy sauce 45ml tomato paste 1tbsp of corn flour mixed with water Salt and pepper to taste Oil for cooking

Method

Heat oil in a wok or a large frying pan and add the frozen vegetable strips. Toss till they get a good colour and keep them aside. In the same wok heat oil and add green chillies, onions, capsicums and sauté. Then add garlic, ginger and cook for a few minutes. Add soy and tomato sauce give a good stir. Then add the vegetable strips, vinegar, pour the corn flour water for thickening and adjust the seasoning if required. Finish with spring onions and coriander and serve with steamed rice.
