Chickpea Omelette

Tofu Bolognese


1 cup chickpea flour

1 tbsp flaxseed meal

1 tbsp nutritional yeast

1 tsp turmeric

1 tsp mix herbs

1/4 tsp baking soda

A pinch of black salt
(that gives you a
great eggy taste)

Pepper to taste




* Mix the ingredients together then store it in the fridge.

* When you’re ready to cook, use 1/4 of mix for 1/4 of water. Give it a good whisk and voila, ready to fry into an omelette!

I prepare my dry mix on the weekend and it keeps me going for the week!
Just have to add water to it and BOOM you’ve got a quick yummy breakie!
