Peanut Butter Cookies

Tofu Bolognese

Ingredients

1 tin chickpeas drained

4tBs peanut butter

3tBs rice malt syrup or any liquid sweetener

1ts baking soda

1ts vanilla extract

 

Method

* Mix all the ingredients in a food processor. 

* Roll into balls and flatten with a fork. Bake on 180 for 10-15mins

Tip:

For an iron boost, use blackstap molasses instead of the liquid sweetener. It will taste like liquorice.
