White Bean & Potato Soup

Potato and White Bean Soup


2 carrots diced

2-3 celery stalks sliced

3 garlic cloves

8 small potatoes diced small

3 tins white beans e.g. Cannellini

4 cups vegetable stock

1tsp Italian herbs

1tsp oregano

1tsp onion powder

1/4 cup coconut milk

Salt and pepper to taste



* Sauté the potatoes, garlic, carrots, celery and spices in a pot with some stock for about a minute.

* Add the rest of the stock and bring to the boil then simmer for about 10 minutes

* Add beans and coconut milk along with the other ingredients and simmer for another 10 mins or so.

* Take half and blend, then add it back to the soup. Alternatively, blend it all up.
