White Bean & Potato Soup


2 carrots diced

2-3 celery stalks sliced

3 garlic cloves

8 small potatoes diced small

3 tins white beans e.g. Cannellini

4 cups vegetable stock

1tsp Italian herbs

1tsp oregano 

1tsp onion powder 

1/4 cup coconut milk

Salt and pepper to taste 



Sauté the potatoes garlic carrots celery and spices in a pot with some stock for about a minute.

Add the rest of the stock and bring to the boil then simmer for about 10 minutes

Add beans and coconut milk and simmer for another 10mins or so.

Take half and blend, then add it back to the soup. Alternatively, blend it all up.
