1 tin cooked lentils Corn tacos Supermarket taco mix Iceburg lettuce, thinly sliced Avocado finely chopped Fresh mint Cucumber finely chopped Salsa Tomato sauce
Drain lentils and mix with 3/4 cup water and taco mix. Heat until sauce is thick. Meanwhile crisp up the tacos in the oven. Once crunchy serve with lentil mix at the base, salad ingredients above and salsa & sauce drizzled over.
