Truffle cashew nut dip

1 cup cashew raw cashew pieces ½ tsp salt Juice of half a lemon ½ cup of olive oil 1 tsp of truffle oil ½ to 1 cup of water


Soak broken cashew pieces for 2hrs in water. Discard that water and blitz the cashews with salt, lemon juice, olive oil, truffle oil and water, depending on desired consistency.
