Ginger Loaf


Dry Ingredients

1 1/2 cups flour

2 tsp ground ginger and 1 tsp ground cinnamon

1/4 tsp nutmeg, 1/4 tsp salt

1 tsp baking powder and 1/4 tsp  baking soda

Wet Ingredients

1 cup plant milk

1 tbsp apple cider vinegar

Sticky Ingredients

1/4 cup coconut oil

1/4 cup molasses and 1/8 cup syrup (eg agave or brown rice syrup)

1/2 cup brown sugar

handful of dates, chopped


1. Sift the dry ingredients into a large bowl

2. In a measuring cup mix together the wet ingredients and let it stand

3. Mix the sticky ingredients until combined

4.  Add the wet mixture to the sticky mixture.  Mix well

5.  Add dry ingredients to the mixture from step 4. Add 1/4 cup of chopped drained ginger

6. Transfer batter to prepared load tin.

7. Bake at 180°C for 40-45 minutes or until a toothpick inserted in the centre comes out clean

8.  Once cooked, transfer to wire rack and cool

9.  Once loaf has cooled, dust with icing sugar and cut into slices
